Mini Boston Cream Pie Cookie Bites

Ingredients:

For the Cookie Base:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

For the Vanilla Custard:

  • 1 cup milk
  • 3 egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract

For the Chocolate Glaze:

  • 1/2 cup heavy cream
  • 4 ounces semi-sweet chocolate, chopped
  • 2 tablespoons unsalted butter

Instructions:

  1. Prepare the Cookie Base:
    • Preheat oven to 350°F (175°C). Line a mini muffin tin with paper liners.
    • In a bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
    • In another bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
    • Scoop a tablespoon of dough into each mini muffin cup. Press down to form a small well in the center.
    • Bake for 10-12 minutes, or until lightly golden. Remove from oven and let cool.
  2. Make the Vanilla Custard:
    • In a saucepan, heat the milk over medium heat until it just begins to simmer.
    • In a bowl, whisk together egg yolks, sugar, and cornstarch. Gradually whisk in the hot milk.
    • Return the mixture to the saucepan and cook over medium heat, whisking constantly, until thickened.
    • Remove from heat, stir in vanilla extract, and let cool.
  3. Prepare the Chocolate Glaze:
    • Heat the heavy cream in a saucepan until it just begins to simmer.
    • Pour over the chopped chocolate and butter in a bowl. Let sit for a minute, then stir until smooth.
  4. Assemble the Cookie Bites:
    • Spoon or pipe the custard into the well of each cookie.
    • Top each with a spoonful of chocolate glaze.
  5. Chill:
    • Refrigerate the Mini Boston Cream Pie Cookie Bites for at least 30 minutes to set.
  6. Serve:
    • Serve chilled as a delightful dessert treat.
